If you order sake in Japan, you can expect to receive beer, wine, or any alcohol, as the term sake encompasses all alcoholic beverages. On the other hand, Nihonshu refers to specifically Japanese sake, a thousand-year-old drink with a thousand facets, resulting from the fermentation of rice. Low in alcohol (around 15%), it should not be confused with baijiu, this fairly strong Chinese alcohol.
